We need to establish a recipe for the next round of the rum barrel fill. For your consideration, I submit a dark mild:

Unseasonably Ryeld

ABV: 3.4%

Batch Size: 5.5 gal
Mash temp: 156F
Efficiency: 70%
Boil Time:  60 min

5.0 lb  Golden Promise/Maris Otter
1.5 lb  Malted Rye
8.0 oz  Flaked Rye
6.0 oz  Chocolate Rye
4.0 oz  Crystal Rye
4.0 oz  Brown Malt
4.0 oz  Blackprinz/Carafa III Special/Midnight Wheat

0.25 oz  Warrior (US)      60 min   
0.5 oz   Mount Hood (US)   5 min

-- Yeast --
London ESB Ale   Wyeast 1968   (AA 69.0%)


It seems like rye malt extract is widely available these days, so an extract version would be possible. I'd drop the the flaked rye and brown malt as those need to be mashed. That said, this would be a good recipe to try your first brew-in-a-bag if you'd like to give all grain a shot.

I really like the idea of a dark mild for the barrel so my vote is in for this. I might suggest tweaking the recipe for little less rye (something <20% grain bill). Right now it's at ~%30, which IMO is going to be pretty strong rye flavor and also make mashing a little more complicated. But I'm welcome to being vetoed on this.

You make a reasonable point about mashing. How about raising the golden promise to 5.75, drop the rye malt to 1 and the flaked rye to 6oz. This makes rye less than 20% of the non-specialty malts. I think the rye flavor contribution of the crystal and choco rye will be significantly less. Overall, rye in any form is then 24% of the recipe.

That is a whole lot of specialty grain. I'm not sure it will work for extract brewers.
